Very Dark maple syrup is known for its bold, uncompromising character—traditionally emerging at the close of the sugaring season, when shifting temperatures and natural transformations in the sap deepen both colour and flavour.

Our approach is different. We craft very dark syrup throughout the season by slowing the process down, allowing time to do the work. Through gentle, extended boiling, the syrup caramelizes naturally, developing layers of warmth and depth that can’t be rushed. The result is a richly complex maple syrup—dark, expressive, and unapologetically robust.

Dark maple syrup is produced late in the sugaring season, when natural changes in the sap create a richer colour and more concentrated maple character. The flavour is bold and complex, with warm notes of caramel and toasted sugar—favoured by chefs and makers for its depth and intensity.

Amber Syrup
